Went to Ching Yuen several times in 2004 spring time due to my friend working over there. It's about a 2.5 hour coach ride from Shen Zhen, the border China city to Hong Kong. The city is just as its named - quiet and remote. The north Ching Yuen is with some picturesque mountain range. The Ching Yuen people know the best way to feed chicken and the Ching Yuen chicken specie is so well known across the nation. The locals told me a story of a guy called "Ghost Valley Hermit (鬼谷子) - doesn't mean he is a ghost but just to describe he was a hermit inside a mysterious valley". Mr. Hermit is an expert at feeding chicken. He used very refined corn and spring worm to feed the chicken. Then the most important part is that he used the high mountain stream water to feed the chicken. So the chicken was then a legend in Ching Yuen. During my visit, of course I tried their local chicken and it's 100 marks! Besides, the Ching Yuen people know how to stir fry choy sum. The choy sum specie is a bit thinner than those we have in Hong Kong but much sweeter and has the flavour of green. Too bad I wasn't into taking photos on meals; so I didn't have those in my library. The photo here is the "Flying over the valley (飛來峽) - the Chinese name is more literal but can't describe it in English well - and it sounds like an ancient kung fu movie. Taking a boat ride along this river makes you feel like you are in such movie. There are actually many scenery spots in Ching Yuen and hot springs too. What a gifted land!

I feel like watching a Canton old time kung fu movie. is the chicken really good after drinking that water?
I think that may be a legendary story for telling how good the Ching Yuen Chicken is, with good mountain water and good grains...etc.
