Lung Moon Restaurant (龍門酒樓), Wanchai, Hong Kong

Haven't been to this restaurant for quite a long time.  The last time the experience wasn't good and it was almost 2 years ago.  So this evening suddenly passed by this restaurant and felt like for a BBQ Goose, as this restaurant used charcoal for grilling.  Then we ordered one (photo 2).  The goose is quite ok but the skin is not crispy enough.  Then the 2nd dish is bitter gourd with silver tiny fish.  A bit disappointed as the dish was not hot enough.  Immediately my friend and I knew what went wrong.  They prepared all the stuff and put them aside.  When there is an order, they just mixed those done food into a dish.  This is the worst cooking technique.  Don't they know food cooked and put aside for a long time is losing their original flavour.  Then the third one is the bell pepper, pickled vegetable stir fried with Squid.  Again, they have the same problem!  So then when we looked at what are around us, almost all of the tables empty.  OK, back to the photo 1, Steamed rice on a beggar's bowl (yes we call it as beggar's bowl in Cinese.).  This restaurant is very constant.  I think it might be just one single incident, but it's not!

Is the bitter gourd same as bitter melon?
We are used to this kind of "fast food" in most of the non-fast food restaurant.
Half of the dishes here in US are pre-prepared, then when we order they just mix and stir fry together. So everything comes so fast but tastes no good. Even the hot pot rice(with Chinese sausage, preserved salty duck, preserved salty pork) can come in 5 minutes. I don't know how they can do hot pot rice in 5 minutes.

yes, that's the one. That's the common mistake most restaurants have but it's unavoidable, considering there are lots of dishes to be prepared. It's hard to prepare the food fresh.

this is like the Taiwanese bento buffet shop, or the Thais khao-caan shop, pre-prepared then pout them on your rice and on a plate with slightly stir-frying

There was a time I brought some western people to an ordinary Chinese restaurant for a fried rice. They all got impressed how the freshly fried rice could taste. Then I recalled how for those China Town's Chinese restaurant made all the food in a mountain shape and thought they looked attractive! Of course, they put the salty taste dishes with lots of soy sauce and make them dark to impress the customers "this is goodddd...", then the sweet and sour stuff with lots of ketchup. Since then, my foreign clients often made excuses to come to HK for Chinese food.
