Or would there be a story behind? Anyway, this chicken is my most favourite Hakka dish. I even prefer it to the famous "chicken smoked in fried rock salt".

Overlord Chicken - hard to find an exact wording for this dish. It may mean overlord, or a tough leader. I guess probably the guy who ordered this must be a tough guy. Or would there be a story behind? Anyway, this chicken is my most favourite Hakka dish. I even prefer it to the famous "chicken smoked in fried rock salt".

I think this is Emporor Chicken because only the Emporor is qulified to eat this kind of delicious chicken.
Oh Tsuei King Lau is still there? This is one of my favorite restaurants in my childhood. Do they still have the beef ball dish?
I think this Chicken shall be called "the Gangster Chicken" because it tastes so good and once the gangster smells this dish he will grap from you. You'd better donate to him fast and run.
OK, these are two good reasons for the name of this dish. Stella, the original Tsuei King Lau (in Hong Kong Mansion in Causeway) is no longer there. As you might be aware, later on lots of restaurants in HK called themselves as Tsuei King Lau. Tsuei King Lau meant so much to me because my mom brought me to that original restaurant in Hong Kong Mansion. As a kid, I then told myself "how come there is such a delicious chicken in this World". I then remember so deeply how that area was (I was 5 or 6 then). BTW, the way of making Rock salty smoked chicken is very difficult. You will need a muscular guy to do the first step for you - plain fry 10 kgs of rock salt until it turned brown (that means it's so hot and burnt). Then put the chicken in wrapped paper and let the hot salt smoke it until it's done.
Yes. That is why I like the old Tsuei King Lau a lot as that connects me to memory of childhood. Food, besides its own taste, has sentimental and emotion meanings too related to our past. And that is why I prefer Shanghai won ton more than Taiwan style dumplings as the former connects me with the past while the later one does not.
Yes, a foreigner asked me what dim sum I like the most. I said "Char Siu Bao" (BBQ pork bun). I simply told him that's the first dim sum I tried when I was 4-5, given by my uncle. I still remember that restaurant was named "Sun Sun 新新茶居" - now McDonald's at the Shaukeiwan terminal station (the roundabout). Also Char Siu Rice - BBQ pork on rice!

Oops... yes, we tried the beef ball with choy sum (vegetable) the other time, but I didn't take pic. It is good too.. :)
