泉章居 - Chuen Tseng Kui, Causeway Bay Plaza HK

It was a big news years ago when his restaurant sold its premises on Percival Street and moved in Causeway Bay Plaza. So the end result is that the old chef can't get used to a new kitchen with all the modern utensils. Its fans and followers gradually left. The last time I gave it a third trial was in 2008 and it was still much below expectation. Out of curiosity, I gave it a fourth trial lately. I am glad that its renowned chicken and some other dishes [fish maw, mushroom & sea cucumber casserole (photo 8)] are coming back after such lengthy struggling years. *photo 2 shows how the old time of washing cups and bowls.

the century eggs r very nice, unlike Man Ho (JW Marriott BKK) and Ding Tai Fung BKK serves very cheap stuff ..

even just an ordinary local restaurant serves food use of good ingredients, do chefs and owners of Man Ho BKK and Ding Tai Fund BKK hv shame?

Esp. that one by Ding Tai Fung, not just cheap, it's not eatable!

Yes, it's pretty good and I am happy to see this shop coming back. So I hope a few years later we can see MOBKK coming back too. :)

Some corporates just see the figures; so if they want the figures, then he may have to stay for a while.

i don't think he can show the board a handsome book, but he has excuse that made sense, red shirt, flood, he is lucky!

Next year they can claim the mainland tourists get spoiled in Europe for finding another wonderland as Amazing Europe. No more amazing Thailand as he will claim... :)
