Yellow Fish Soup, by Crystal Jade, Wanchai, Hong Kong



Felt like finding some dishes I haven't tried at Crystal Jade.  Here are the minced sauce on noodle, yellow fish soup and the typical Shanghai stir fried sticky rice cake.  The food is expectedly good and we don't expect anything more.  About the soup, they first used some fish to boil the soup as we can tell from the color of the soup.  Then the yellow fish was pan fried and then put back to the soup.  When we ate the fish, it is still a bit salty.  I think for Shanghai style, they often marinate the yellow fish with salt to make the texture harder.

Is this the same "Crystal Jade" we ate in BKK?
The Yellow Fish I made did not use too much salt(I still use salt to marinate but not too excessive.) Instead, I use lots of dark soy sauce to make the color. Then put some kind of Shanghai Kam Wah Ham with the fish. And add some Cane Sugar Bar(to make the color dark). Shanghai dishes usually have the dark color with some sweet taste on top of the salty.

Crystal Jade was first established in Singapore by a HK guy. As it's quite successful and then it went back to HK for the noodle and siu lun bao. The noodle shop was with a long line for people waiting for 2 hours. Yes, their old shop in HK was just next to my apt. Later on, Crystal Jade diversified their restaurants into Korean, Western and bread shop in Singapore, while expanding their shops in Bangkok, Kuala Lumpur, Jakarta, Beijing....etc. Yes, this Wanchai outlet is the in the same group.

Actually instead of salt, you can marinate the yellow fish with miso paste (the Japanese soup paste). Yellow fish and cod fish have the same "soft" texture. So the miso paste can make the texture harder and taste better. Don't use too much. Just a thin layer inside the tummy and on the fish body. Then you can slightly pan fry it.
